Beer is a refreshing drink in the food industry, containing many compounds of Ethanol and Carbonic acid. Made from ingredients such as malt, hops, yeast and water, the production process includes stages such as malting, fermentation, brewing, and bottling. During the production process, a lot ofbeer residue and wastewater is discharged. Therefore, the treatment of these wastes is extremely necessary to avoid causing environmental pollution.

Composition and properties of brewery wastewater

   Brewery wastewater has a fairly high level of pollution, typically with high levels of protein and carbonate organic substances, accompanied by pH indicators; color degree; high turbidity; disease-causing bacterial microorganisms.

Brewery wastewater arises from many different sources:

  • Cooking and saccharification stages: Mainly water used to clean cooking tanks, tanks, and floors. Wastewater at this stage contains a lot of residue, starch, flower residue and organic compounds.
  • Main fermentation and secondary fermentation: The wastewater from this stage is rich in yeast residue – mainly protein, minerals, vitamins along with beer residue.
  • Finished product stage: Filtering, CO2 saturation, bottling, bottling, steaming. The wastewater here contains filter aid powder, yeast residue, and beer overflowing…
  • The process of rinsing bottles and tanks: The wastewater produced has high pH due to washing with hot dilute alkaline solution.

Beer production wastewater is often characterized by very high organic matter, the wastewater is dark gray in color, the COD, BOD, TSS, N, P content are all very high, the wastewater temperature can range from 36- 400C.

At the collection tank

Wastewater from the factory area is separated from rainwater by a centralized wastewater drainage system to the collection tank of the wastewater treatment station. Before the wastewater enters the station, the wastewater is pumped through a separator. raw garbage to remove trash residue from the waste stream.

At the conditioning tank

From the wastewater collection tank, the submersible pump pumps it to the equalization tank. Here the wastewater is regulated in terms of flow and components, the regulating tank is equipped with an air supply system to avoid sedimentation and anaerobic decomposition, the wastewater is pumped to the anaerobic biological tank

At UASB tank

At the UASB tank, wastewater is evenly distributed at the bottom of the tank and goes from bottom to top through the suspended sludge layer. Once through this sludge layer, the anaerobic sludge mixture in the tank will adsorb organic matter in the water. waste, and at the same time converted into biogas produced, which is carried up the exhaust pipe and used as a gas energy source for the plant.

The treated water rises through the overflow trough and flows to the lamen sedimentation, after lamen sedimentation, it moves to the aerobic biological tank.

At the aerobic tank

In the aerobic tank, the aerobic biological process takes place thanks to the amount of oxygen dissolved in the water. An appropriate amount of oxygen is provided to the activated sludge to compost the remaining organic matter in the wastewater. Most organic pollutants are used to maintain microbial life, so only a small amount of activated sludge is produced.

The water then flows to the biological sedimentation tank, where the water is separated from the sludge. The round water flows to the sterilization tank and the sludge settles and is pumped to the sludge tank

At the disinfection tank

The water disinfection tank in this tank is exposed to disinfection chemicals before being discharged into the environment to meet environmental standards.

The sludge in the sludge tank is pumped into a sludge press to form cakes and taken to the designated place. The remaining water is circulated back to the equalization tank for the next processing step.
